How to Harvest Your Microgreens
Peas
When you buy your Microgreen Peas from Village Greens, they are at their peak--crisp, flavorful and nutrient-dense! We recommend that if you are not going to eat them within 24 hours that you harvest them right away. The best way to do this is to take a clean pair of scissors and cut them close to the seed, including all the green. (You may of course also eat the seeds!) Put the cut microgreens into a sealed container with a paper towel lining. No need to add water or anything! Put them in the fridge, and your microgreens will stay fresh and nutritious for at least a week. If you are going to eat them right away or within 24 hours, you may leave them on the counter. Just make sure that you keep the coir pad moist by placing it on a plate and adding a small amount of water. Remember, these microgreens are living, which means that they will continue to grow. Within a few days they will become a little tougher, so be sure to harvest them before that happens.
Radishes, Kohlrabi, Brassicae Mix
Radishes and other brassicae are more delicate than the pea microgreens, so it's best to keep them rooted in the coir pad until you are ready to eat them. Simply place them in an open food container (Tupperware, Pyrex, etc.), add a little water to the bottom of the container, and put them in the fridge. They will continue to grow a little, but not much (too cold!). They will stay fresh and ready to harvest for a week or more. Just pull them out of the coir pad by the roots, or cut them with a sharp, clean pair of scissors. You can also wrap them in damp paper towels, but be sure to change the paper towels every couple of days or the microgreens will dry out. Enjoy!
